Fuchiko > Story of Table 41



Since the opening of Bukit Panjang hawker centre, my hubby and I will go there for breakfast during weekend.. So what is so special about table 41... Hmmmmm.. This table make me feel good about people.. We happen to be sitting at the same table everytime we visit the place.. Every time we get to make small chat with those sitting next to us.. We chat and review on the food that we ordered.. We comment on those Long Q.. We ask people to chop our seats while we order our food.. We wave at people who are looking for seats and offer the empty seats.. We will chat and say goodbye when leaving.. Is has been a Long Long time since we experience this kind of warm environment and people..  

So the story of Table 41 will continue this way.. We will try to sit there again next time to meet new people and hear new story...

Oneh Oneh

Ingredient
-one sweet potato, mashed
-1 cup of tapioca flour
-2 palm sugar
-1/2 whole fresh coconut, grated

Method
1. Steam grated coconut with pinch of salt for about 10-15min. Set aside to cool once cooked.

2. Cooked the sweet potatoes with a pot of water until soften. Mashed the potatoes completely. Set aside to cool.

3. Use an apple peeler to scrape the palm sugar.

4. Mix the mashed sweet potatoes with tapioca flour. Use hand to mix and squeeze them to become a dough. (Adjust flour accordingly.  Potatoes : Flour, 5:4)

5. Divide the dough into small portion, about 1 Tbsp. Roll into ball, use thumb to press into the ball, fill the hole with palm sugar. Closed the opening and roll into a ball. Set aside.

6. Heat up a pot of boiling water. Throw in all the balls. Once the ball float up, it is cooked.

7. Put the ball lightly onto the plate of coconut and roll. Once the ball is covered with coconut, it's done.

*Note
I failed on my first attempt when i finely chopped the palm sugar, it doesn't melt completely even when i cooked very long.
So i tried again using the peeler, and it was ok this time.

Panfried Tapioca Kueh

I was thinking what to try out this week, and suddenly i got graving for tapioca kueh, and decided to test it out.

It was not too difficult. The hard part was grating the tapioca. Lucky my father happen to drop by. He say he is the expert. I was like @@... He shared that he help to grated tapioca for his aunty when he was a kid, to earn some pocket money.
He ask me to use the finest blade because the tapioca have to be very fine.

As the mixture was quite big portion, so i ask my sister to help out with the cooking. It waa quite fun, we each used one stove to speed up the process.

Ingredient
-1 large size tapioca (About 500g when grated)
-220 raw sugar / white sugar
-120g all purpose flour / plain flour
- 1/2 whole fresh grated coconut (About 280g)
-pinch of salt

Method
1. Mixed grated tapioca, sugar, grated coconut together in a big mixing bowl. Mix well.

2. Add in sifted flour into the mixture and mix well.

3. Add in pinch of salt. Mix well.

4. Heated up non-stick frying pan with some oil. Add 3 Tbsp of mixture on the pan and flatten it. Cook with small flame.

5. Flip constantly to make sure is not burnt. Cooked till it is a bit crispy on the surface.

Note: Do not flatten too thin, tapioca cake have to be a bit think to have the chewy taste.

Salsa Dip

Chilled salsa dip for the hot weather.

This is easy, coz I juz put everything in a blender..

Ingredients
- 6 tomatoes
- 1 packet of coriander leaves
- 1 cucumber

Seasonings
- sea salt
- olive oil
- apple vinegar
- dash of pepper

Methods
1. Put tomatoes and coriander leaves in a blender to blend thoroughly. (I add a bit of water to make it blend smoothly)

2. Cut the cucumber into dices

3. Put all the mixture and cucumber into a mixing bowl and mix well.

4. Add in all the seasonings. (Adjust according to your taste.)

5. Put in the fridge to chilled.

6. Serve with crackers.

Healthy salad

I love adding apples to my salad as it will give a sweet taste. This time I added some left over melon into it.

Ingredients
- 1 Fiji apple
- 1/2 melon
- 1 onion
- 1/4 can of sweet corn
- few pc of lettuce
- dash of olive oil
- dash of apple vinegar
- 1 Tbsp mayo

Method
1. Cut all apple, melon, onion and lettuce into small pieces and place in a big mixing bowl.

2. Add in sweet corn, olive oil, vinegar and mayo. Mix all the ingredients evenly. Serve.

Vintage luggages - part 1


This is my first collection of vintage luggages. I bought 2, one in red and brown. The brown one is very dirty and dented but I just love the way it is. 

When I ask the old french uncle for the price, he want 25 euro. And I know I will never buy. Then he start reducing the price from 25 to 20 to 15 to 10. But it's still not within my budget cos I have a long shopping list. I walked off. 

This was a big size flea market so by the time I complete my treasure hunt, it's almost closing time. So I tell my hubby, let's go back to the luggage uncle to check if he want to discount. When we reached there, the uncle and his wife are busy packing up their stuffs into their big van. The old granny attended to me so I ask if she willing to sell that luggage to me at 5 euro. And here we go, it's going home with me. Hahahaha.

Tea sets - no 2 and 3


2nd set
This is my 2nd set of tea sets that I bought. It consists of a pot, sugar and creamer jar, 11 sets of cup and saucer. I bought it in the flea market last month at 2.50 euro. YES IT'S 2.50 euro. I can't believe it. I thought my french is so lousy that I get my friend to ask again. I didn't even check if they are broken or missing items. It's still worth it even they are not complete set. I think it is a good buy not only because it is cheap but also the shape and color. 

3rd set


This is the 3rd set I bought last weekend.   This is not a complete set as it have more saucers than the cups. It's ok I don't really mind. This set has bigger cup size than the previous 2 sets I had, and the flower print on the front and  back of the cups are different. 

I was not in the rush of buying when I saw her. Cos i do not having enough shelving at home, therefore i need to consider. The french granny ask for 5 euro, so I take my time to walk around before going back to her to see if it is still there and also ask for discount. Yes, it is there so she is going back home with me then. Final deal is 4 euro.

Second hand toys in flea markets


I started to fall in love with second hand stuff when I came to France. During spring, there are countless of flea markets around. People rent a small space and sell their unwanted items at cheap price.

I get to know from my french friend that the French hardly throw away items that can still be used. Either they sell it at the flea markets or at the second hand shops. I think this is great idea, they are recycling old items.

Some items are really old but I think they are gems. I bought a Snow White music box last month. The color is fading but it is still in good condition. And if I want to get a brand new one, I doubt I can ever find. That's why I love to buy second hand items now, cos it is no longer available in the market.

Radish Soup

This is real easy... Just 3 ingredients... White radish, carrot and pork ribs.

Radish is not a everyday veg in the supermarket here, therefore I will stock up when I see it on the shelve.

I am using Tefal WiKook to cook soup nowadays as it helps to speed up the cooking time and retend the nutrition. The best part is the water will not evaporate off and I do not need to keep refilling with water.

One more advantage with using Tefal WiKook, is that the taste is so strong that I do not need to add salt.

Ingredients
1 large white radish
2 carrots
5pc of pork ribs
1L of water

Method
1. Blanch the pork ribs, drain off the water and set aside
2. Cut the radish and carrot into small cubes or pieces
3. Put the pork ribs, radishes, carrots and 1 liters of water into a pot and bring to boil.
4. Turn the flame to low and continue to cook for 1hr.

Note:
Above cooking time is based on using Tefal WiKook.

It take about 2-3 hrs cooking time with normal pot to achieve the same taste. But if you don't have the time, just add a bit of salt to taste.

汤圆 Tang Yuan Glutinous Rice Ball

 
I was wake up by my Whatsapp this morning, it was a message from my brother-in-law wishing me Happy DongZhi. So today is DongZhi, i didn't even know. My mummy did not mention about it when i called her last night. OK i decided to dragged myself out of bed so that i can prepared the Tang Yuan for my love one.
 
I start searching for the recipe in my blog but i can't find. I remember i did cook last year and also take photo to upload to my blog. Seriously i really can't find. So now i have to redo it again. That's the problem with me, i write all these recipes so that i can find it online whenever i need it, BUT sometimes really lazy and forgotten about it after eating.
 
 
Ingredient
 
For the Balls
  • 1 cup of glutinuous rice flour
  • 1/2 cup of water
  • A few drops of red coloring
For the Soup
  • A few slices of ginger
  • 1000ml of water
  • 1/2 cup of sugar (add according to your preference)
  • Pandan leaves ( i don't have so i still it out)
 
Method
  1. Place the glutinuous rice flour into a big bowl. Add 1/4 of the water and start kneating. Continous and repeat the process until all the water is mixed. The dough should be smooth and a bit sticky. (Note: if too sticky, add more flour)
  2. Cut the dough into two portion. One portion add in the red coloring. Add just one drop at a time and kneat. Continue adding until you achieve the colour you want.
  3. Now you have one dough of white and one dough of pink. Start rolling them into a long bar. Cut them into small pieces.
  4. Put the small pieces on your palm and roll it into a ball. Place the balls aside.
  5. Boil the 1000ml of water in a pot, and add in the ginger and sugar. Stir until the sugar dissolve. Taste and add in more sugar if you like it to be sweeter.
  6. In another pot, boil a pot of water. Put in the balls and cook until it floated on the surface.
  7. Now, put our cooked balls into a bowl and pour in the sweet broth. Serve.
